The weather outside today was cooler and Mother Nature managed to cover everything with a layer of snow. I mean really, snow in mid April, what’s up with that? (SNL anyone??) So I decided to find a recipe for some chewy chocolate chip cookies to make. I have known freshly baked cookies can help any bad day get better. This is the recipe I found with a few changes.
Huge and Chewy Chocolate Chip Cookies
2 cups A.P. flour
1/2 tsp. baking powder
1/2 tsp. salt
3/4 cup butter or margarine, melted
3/4 cup packed brown sugar
1/2 cup white sugar
1 tbsp. vanilla extract
1 egg yolk
1 1/2 cups chocolate chips
- Preheat oven to 325 degrees F.
- In a medium bowl cream all of the sugar with the butter until blended. Beat in vanilla, egg yolk and whole egg until light colored and creamy looking. Then mix in flour salt and baking powder. Stir in chocolate chips. Drop by large tablespoon full onto cookie sheet.
- Bake for 13-15 minutes, until edges are light brown. Cool cookies on baking sheet a few minutes before transferring to wire rack to finish cooling.
I hope you enjoy these cookies. They turned out nice and chewy and reminded me of Subway’s chocolate chip cookies. Feel free to add more chocolate chips or substitute your preferred chip; butterscotch, mint chocolate, peanut butter or white chocolate. And if you are feeling very adventurous add nuts, crushed up mini chocolate bars or even cinnamon or nutmeg. The cookies are addictive so it might be best if you hide them in a safe place so there are some left for you, because THEY ARE THAT GOOD!
