We celebrated my Mom’s birthday last month, and had a special supper for her. I did all of the cooking and was able to discover a couple new recipes that were very good.
We had a large steelhead trout filet that I crusted in a walnut coating and baked in the oven. It was fairly easy to do and turned out very nicely. The crust was basically crushed walnuts, flour, rosemary, salt and pepper. I used a simple egg wash to make it stick.
With the trout I served a green bean sauté that was a nice addition to the fish. It started with green beans from the garden last year that had been frozen, I sautéed them with olive oil, garlic, soy sauce, and chili flakes. They had a bit of heat, but not so much that it was over powering. To balance off the meal I made plain basmati rice. Not long ago I purchased a rice cooker and have found when I use it to make basmati rice it turns out perfect every time. You just put the rice and water in it, close the lid and press start. A little alarm goes off when the rice is done, you then fluff it and then close the lid again and your rice is kept warm until you have finished preparing the rest of your meal.
For dessert we had a cake from our local Co-op grocery store. They now carry Cake Boss birthday cakes, so we purchased one and served it with vanilla ice cream. The cake is a very moist double layer cake. One layer is vanilla and the other is chocolate. It was then iced with a very colorful buttercream icing. It turned out to be a very tasty birthday supper.
