Tamale Pie

Last Christmas I received several cookbooks, and one of them is called Mexican Made Easy.  It is part of the Company’s Coming Series written by Jean Pare.  There are lots of delicious looking recipes in this book, but after hemming and hawing, I chose to make one called Tamale Pie.  It is a Mexican take on Shepherds Pie, using a cheesy corn meal topping instead of mashed potatoes and a ground beef veggie filling instead of ground lamb.



I added several extra ingredients to this recipe.  In addition to the corn, onions and tomatoes that were already part of this recipe I added black olives, chipotle peppers in adobo sauce and kidney beans to the filling to add more texture and flavour.

I served the Tamale Pie with fresh raw vegetables and fresh avocado slices sprinkled with lime juice.  This was a very satisfying and tasty dish.  It was comforting and had a bit of heat, but can be adjusted according to your own personal preferences. I think this will become part of our regular meal rotation.  Family members gave it two thumbs up!!

  2. This sounds like a nice flavourful meal to enjoy in the cold winter months. I like the polenta type topping, looks so nice and fluffy/cheesy! I plan on making this soon.
